I’m getting my V60 and Encore this week and very nervous to see how my first pour over turns out. Also, V60 is very susceptible to minor changes in things like pouring speed so it is not always the grind changing things like draw down speed.

The smaller the number, the finer the grind. If you're over extracted start going a few clicks in the coarser direction, if under then go a few clicks finer. I think like some other folks said, it depends on your specific machine.

I can get an espresso grind at 4 and 5. Look up "Dialing in" v60 i.e., if you brew a weak cup, grind finer til you hit bitterness, then go back coarser. Both methods yield similar results for me.
I'm usually in the 18-20 range when using my V60, I started at the recommended 15 and agree that it comes out bitter/over extracted.
I adjust tamping pressure and the amount of coffee to compensate for a lack of grind … You should be able to tell after that.
But now what? Stay healthy and drink lots of coffee my friend! But that is just the manufacturer recommended starting point.
With my encore, I wasn't too happy with 22, so I bumped down to 20. I'd say start at 15 and get progressively finer. The water basically fell right through the grounds and totally under-extracted. Learn what effect grind size has on taste and adjust based on that.

The grind took a lot longer as the grounds passed through the burrs a lot slower with the fine setting. For V60 I grind on 19 with the same ratio.
